Will a multi-function steering wheel (with volume control) still work with a replaced head-unit?

I was thinking about buying a number of cars (i.e. 1999 Cadillac Eldorado) that have a steering wheel with volume control buttons on or behind the steering wheel but no cd player. I was wondering if I switched the head-unit out for another 1 with a cd player, would the volume control and song selection buttons work with the new head-unit or would they become useless?

you have to buy a deck that has a remote control. They sell some kind of interface box that will then allow you to retain use of the steering wheel controls. Just stop into a car audio shop and they can tell you exactly what its called but I know they cost about $50. You can make it work to answer your question though.
